WHere is a simplified version of a beverage found on a new menu. Designed as a large-volume pre-mixed that is bursting with the essence of the festive period, rendering it perfect for your festive gathering. Any leftover cordial you can use for morning drinks, desserts, or to mix another batch of bikinis.
Bikini Recipe
Makes enough for 10 servings
To make the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Place all the items inside a saucepan, bring to a gentle boil, stirring so the sugar melts. Next, remove from the burner and leave to reach room temperature fully. Decant to a clean bottle, cap it and store chilled, it can be stored for around one month.
Preparing the Cocktail Base: Mix every liquids into one big jug, allow it to infuse for an hour, then strain best through muslin, so it's perfectly clear.
For serving: Pour 85ml of your premix into your mixing glass containing ice, and agitate gently for one minute until cold. Strain into a frosted cocktail glass or a similar vessel, top with the cranberries adding the final touch with a light spray with the mandarin essence over the top.
